Chocolate ‘Scorzette’


  • Bio orange rids
  • Sugar (10% less than the quantity of scorzette)
  • High-quality Dark chocolate (100gr for 20 scorzette)


Wash the orange rids carefully and put them in a pot with water. Bring to a boil and let it cook for 10 minutes. Rinse the rids, put them in cold water and rinse them again. Do this procedure twice.

Weigh the rids and put in a large pan. Add sugar (10% less than the quantity of scorzette) to oranges and start cooking at low heat. Reacting with the water of the rids, you’ll create a syrup. Keep on cooking until sugar begins to crystalize but without browning. Then set the fire off and with a place the scorzette on some parchment paper to cool.

Melt the dark chocolate water bath and then dip ¾ of each rid in it.  Let the rids cool on a parchment paper foil.
